Filet of Sole with Mango Salsa

Serves: 4
Preparation Time: 15 minutes

Ingredients:
1 ripe mango, peeled, cut into small pieces
3 green onions, chopped
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lemon juice
2 teaspoons chopped, seeded fresh jalapeno chili
4 pieces filet of sole (or flounder)

Instructions: To prepare salsa, combine first five ingredients in bowl. Let stand at room temperature 10 minutes to 2 hours.
Preheat broiler. Lightly coat a broiler pan using a paper towel moistened with olive oil. Broil fish 4 inches from heat source until just cooked through, about five minutes or until fish flakes easily with a fork. Spoon salsa over fish.
