St. Patrick's Salad

Ingredients:
4 cups (120 g) organic baby spinach
4 cups (188 g) romaine lettuce, torn into bite sized pieces
2 cups (94 g) Boston lettuce, torn into bite sized pieces
2 cups (60 g) arugula
1 cup (34 g) watercress leaves
2 heaping cups (170 g) snow peas, sliced
1 cup (134 g) frozen peas, thawed
5 scallions, chopped
1 medium cucumber, chopped (no need to peel if organic)
1 avocado, chopped
1/4 cup (35 g) raw pumpkin seeds
BASIL APPLE DRESSING
1/2 cup (46 g) sliced almonds
1/2 cup (68 g) pine nuts
2 apples, chopped (no need to peel if organic)
5 packed cups (200 g) fresh basil leaves
4 cups (240 g) fresh parsley (do not pack)
4 medjool dates or 8 deglet noor dates, pitted

Instructions: Mix all salad ingredients together.
BASIL APPLE DRESSING: Blend almonds and pine nuts together in a Vita-Mix or other powerful blender. Add apples, basil, parsley, and dates and blend until creamy. Add a little water if needed to thin, and toss with salad.
