Ingredients:
1 large bunch bok choy, chopped
1 large bunch Swiss chard, chopped
1 medium onion, coarsely chopped
2 cloves garlic, chopped
1 15-ounce (428 g) can diced tomatoes (no salt)
2 cups (140 g) shiitake and/or baby bella mushrooms, sliced
1/2 teaspoon dried Italian herb seasoning
Instructions: Place bok choy, Swiss chard, onions, and garlic in a large steamer and steam until almost tender, about 10 minutes. In a large pot add tomatoes, mushrooms, steamed greens mixture, and seasoning. Simmer over low heat for 5 minutes, stirring occasionally.
