Ingredients:
4 large sweet potatoes, peeled
2 medium Granny Smith apples, peeled and diced
3/4 cup (81 g) raw cranberries, fresh or frozen (optional)
1/2 cup (54 g) raisins
1/2 cup (125 mL) orange juice
Instructions: Preheat oven to 350 degrees. Cut peeled sweet potatoes into 1-inch chunks and place in a large baking dish with lid or 9" x 13" (23 x 33 cm) glass baking dish. Top with diced apples, cranberries, and raisins. Pour orange juice over all. Cover with lid or use parchment paper cut to fit pan and then cover tightly with foil. Bake for 1 & 1/4 hours or until sweet potatoes are tender when pierced with a fork.
