Ingredients:
6 cups (1.5 L) water
1 cup (197 g) dried green split peas
1 cup (130 g) turnips, chopped
3 medium onions, coarsely chopped
3 medium carrots, coarsely chopped
3 organic celery ribs, coarsely chopped
3 medium potatoes*, cut into bite sized pieces
4 medium cloves garlic, minced
1 tablespoon VegiZest
1 tablespoon Bragg Liquid Aminos
Black pepper, to taste
2 tablespoons pickling spice** (placed inside cheesecloth)
1/2 large green cabbage, chopped
Instructions: Place all ingredients, except pickling spice and cabbage, in a large soup pot. Place pickling spice inside cheesecloth and tie tightly with string. Add cheesecloth bag to rest of ingredients in pot. Bring to a strong simmer over med/high heat. Simmer, uncovered, for 30 minutes. Remove spice bag and discard. Add cabbage and stir. Simmer over medium heat for 20 minutes, stirring occasionally.
*No need to peel potatoes if they are organic.
* *Pickling spice without sulfiting agents added may be found in health food stores.
