Quinoa Mash

Preparation Time: 10 minutes
 
Ingredients:
1 cup (170 g) quinoa, rinsed well
2 cups (500 mL) water
1 cup (250 mL) vanilla soy milk
1/4 cup (44 g) chopped prunes
1/4 cup (40 g) dried blueberries
1/4 cup (33 g) chopped dried apricots (unsulphured)
1/4 cup (41 g) raisins
1/4 cup (37 g) chopped dates
1/2 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 cup (33 g) chopped Brazil nuts

Instructions: Simmer the quinoa in the water for 10 minutes. When water is absorbed completely, add the rest of the ingredients and simmer another 10 minutes until soy milk is absorbed.

(Quinoa is a grain which is a good source of iron, protein, and other nutrients. Be sure to rinse it well, using a small screen strainer, since some of the bitter coating may not have been removed during processing.)
